We are closed to the farmers
To embody our sincere commitment and values and to federate virtuous practices and knowledge of our territory, we have chosen to collaborate with trusted people.
Farmers, gardeners, winegrowers, dairies… We can tell the story of each dish we make. A constant search for a particular food, original flavor, excellent and passionate farmers. Our cooks value the tradition and the fruits of the earth with humility, without altering them.
Caseificio Contignano
Pecorino di Pienza is a particular cheese thanks to the wild herbs that grow in the pastures. A long-standing tradition that has preserved the panorama; today the UNESCO natural artistic park of the Val d’Orcia.

Bottega delle Carni
The products of the San Quirico d’Orcia meat shop are born from the Tuscan tradition and from the love for the Val d’Orcia, rich in natural and artistic but above all culinary treasures. Chianino beef and Cinta Senese pork are a prized tradition.
Our Gardens
Every day our cooks draw from the vegetable garden and orchard in search of the flavors of the day. The gardener cares with love for our crops, all organic. A particular moment of his day, a close embrace with nature.

Montalcino wine
Brunelli di Montalcino are Sangiovese wines famous all over the world. Their quality is no longer to be proven. The good air and the rolling hills of the Val d’Orcia have made up singular and exceptional terroirs. We have a special relationship with distinguished winemakers in the area.
AIRO - Italian Oil
To bring the extra virgin olive oil of excellence to the tables, not only in terms of efficiency but also of quality. We select the best Italian oils of the vintage and complete the offer with oils from the Val d’Orcia such as Az. Agr. Sante Marie and Poggio al Vento.

Montepulciano Wine
Nobile di Montepulciano and Rosso di Montepulciano are two big names in the Italian wine-making tradition. Straddling the Val d’Orcia and Val di Chiana, a very particular area for its excellent aging wines.
Black bee honey
The Amodeo Carlo farm, a SlowFood presidium for the protection of high-quality small businesses. The honey, very special and tasty, is made by a black bee. An African variety, more resistant but also wilder than the traditional European bee. Incredible flavors to enhance our desserts.

Val d'Orcia Wine
How can we choose among many good wines, even if less known for those who discover the Val d’Orcia for the first time? We are fond of Sante Marie’s ORCIA DOC in Bagno Vignoni, Poggio al Mandorlo’s Montecucco, Colle Massari’s Bolgheri and Loacker’s Morellino di Scansano.
